We don’t love the time they take to make.

The flaw Getting a drink can take forever.
The defense “That’s true to an extent,” says Whistler mixologist Paul McGee. But, he adds, the owners recently retrofitted the bar to better accommodate heavy cocktail traffic. Plus, if you avoid the busy hours of 10pm–12:30am, you’ll likely get your drink in a jiffy.
Potential for change Fair
Alternatively Bartenders at the Bristol (2152 N Damen Ave, 773-862-5555) take their time making drinks, too, but the cocktail menu lists the wait time for each—so at least you know what you’re in for.
