East meets west Sandeep Malhotra isn’t knocking Devon Avenue. The India native just wants to show Chicago another side of India with his new restaurant Marigold. “This is modern Indian,” Malhotra says. “We’re taking ingredients that Westerners know and love and enhancing them with Indian techniques and recipes.” Malhotra enlisted chef Monica Riley (Meritage, Hopleaf, Treat) to bridge the gap between modern and traditional, and along with Malhotra’s family as consultants, she’s built a menu that’s about 25 percent traditional dishes (a vegetarian thali features chana masala, spicy eggplant, and saag paneer that uses fresh spinach and house-made cheese, pictured right) and 75 percent original options like coriander-crusted halibut on a bed of black lentils, topped with crispy pakora veggies (pictured center). Initial launch Beer and brats? Buds and babes? It can’t be bed and breakfast. So what exactly do the Bs in the new BB’s “gastropub” stand for? They’re an homage to Bud Binyon, the legendary owner of Binyon’s Restaurant, which survived in the Loop for the final 60 years of the last century. Binyon’s son Jack and his business partner Donnie Kruse (Stanley’s Kitchen, Melvin B’s) have teamed up again to open what they’re calling the city’s first gastropub. We won’t start with comparisons just yet, but they do have eight beers in the fancy Belgian-built draft system and two-dozen bottles in the cooler. Chef Jerry Pelikan is serving up global eats such as pork chop Milanese (pictured front) and seared tuna niçoise salad (pictured center), but there’s no sign of a beef-and-brandy combo to really drive home the joint’s name. 22 E Hubbard St between State St and Michigan Ave (312-755-0007).—Heather Shouse
