There’s no shortage of pork in Pilsen. Dip into any one of a dozen taquerías and you’ll find giant vats of crispy carnitas or hunks of roasted pork hiding in fresh tamales. But Willie Wagner wants to deliver pig to Pilsen all-American–style, via his Honky Tonk Barbecue. If the name sounds familiar, you may have seen the Honky Tonk portable smoker kicking out ’cue at a neighborhood fest last summer—Wagner was at the Hideout Block Party, Northalsted Market Days and Summer on Southport, among others. And after receiving countless compliments, typically mumbled through bites of smoky pulled pork, Wagner believes he has the chops to set up shop. His Southern Pride smoker eats up apple and hickory wood to flavor what he’s dubbed “Memphis-style,” dry-rubbed St. Louis and baby back ribs, pulled pork and beef brisket. The country-casual dining room is adjacent to a party space, where local band Fulton County Line will play on opening night Saturday 29, helping the joint to live up to its name. 1213 W 18th St between Racine Ave and Allport St (312-226-7427). I am a food connoisseur. I love to eat and love food. My wife is from Memphis and has competed with friends and family for years in the Memphis in May bq fest...so let me say I have had a lot of great bq both home cooked and at the "top" restaurants. Honky Tonk's pulled pork is right up there with them all. When I was served my sandwich I said holy sh!t that's a lot of meat. I also had the hot link which was huge also. Couldn't finish that so brought it for a friend for lunch. Can't wait to try the brisket.
Haha Pilsen Resident, you must be one jealous guy. Food here is great, you're not going to find a good BBQ restaurant like this around Chicago. I like it better than Smoque. Their drinks are watered down? It's BYOB, bring your own drinks. I thought they only served water, I may be wrong.

THIS PLACE SUCKS! DO NOT EAT HERE! The food was flavorless, I've had better ribs at Chili's - at least they know about spices. Someone needs to give the owner a spice book and show him how to use salt and pepper. The ribs didn't taste like anything, they were dry and the "famous sauce" taste like ketchup and its very watered down. YUCK! Also, learn how to make corbread, it should taste like corn and have some flavor to it. Coleslaw was also flavorless.
