Wolfgang Puck may not seem like the likeliest candidate to oversee a kosher kitchen in the Institute of Jewish Studies, but Puck married into a Jewish family and his kids are raised Jewish. At Spertus Café, scheduled to open Friday 30, Spago’s famed chef plans on incorporating some of the traditional dishes he’s learned via familial ties, as well as seasonal salads and sandwiches aligned with the Californian–New American style with which he’s become synonymous. Chef Laura Frankel (pictured), of Skokie’s kosher spot Shallots Bistro, will oversee the day-to-day operations at Spertus’ casual, daytime-only café, while an on-site mashgiakh will keep things kosher.
