Poland’s Pierogi
WHAT IT IS
Flour dumplings filled with potato, meat, cabbage, cheese or a combo of any of those ingredients and then boiled and pan-fried
HISTORY
Flour, water, potatoes and a few minutes are all it takes to make these pasta pockets—all things most Poles have on hand. Many families make big batches and store them in the freezer until they’re resuscitated on a cold winter day. Originally a staple for Polish peasants, pierogi rose up the ranks to even the upper class and royalty once their deliciousness was discovered.
