Mexico’s Arroz con leche
WHAT IT IS
Literally translated, the name means “rice with milk.” Rice is cooked with milk, sugar and raisins to make a soupy pudding.
HISTORY
Mexico’s first food staples were beans, corn and rice. Since rice is so inexpensive to produce and to buy, it’s not surprising that it bled over from savory to sweet to be used throughout the meal. While this dish originated in Asia, where rice was first cultivated, it’s most popular throughout Mexico and Latin America, where it’s cooked in large batches and served family-style.
