WHAT IT IS
A soup of beets, cabbage, onions, carrots, tomatoes and lemon juice, served hot or chilled with a dollop of sour cream and dill
HISTORY
Borscht is made from the staples in a typical Russian pantry—since Eastern Europe doesn’t grow quite the array of vegetables we see in the States, the region relies heavily on root vegetables. Families typically make huge pots of the soup so they have some in their fridge at all times. It’s inexpensive, it lasts for ages and it’s warming on Russia’s many frigid nights.
