TEAM BUILDING Giuseppe Tentori has a lot on his plate. Having just been named one of Food & Wine’s best new chefs will likely bring a spike in interest for what he’s doing at BOKA. Now, his team (which also owns Landmark) is launching Perennial in the yet-to-open Park View Hotel. The sole dining room for the former Lincoln Park Days Inn, Perennial is, as described by Tentori, “an American bistro with simple food and lightly modernized classics.” That means surf and turf arrives raw, as a square portion of bigeye tuna sashimi and another square of Angus strip loin carpaccio, and chicken drumsticks get beer-braised onions and blue-cheese foam. To execute this fairly whimsical platform, Tentori has selected Ryan Poli for chef de cuisine, and the former Butter chef with a penchant for new-wave Spanish techniques has put his stamp on the menu via dessert combos like raspberry custard with cream-cheese foam and graham-cracker ice cream. And to cover breakfast in the lounge when the hotel opens in fall, Tentori tapped HotChocolate’s Mindy Segal to provide the baked goods.
