Morton’s The Cookbook by Klaus Fritsch with Tylor Field III and Mary Goodbody (Clarkson Potter, $32.50)
It’s not a recipe that makes a good steak—it’s the meat. Yet this tome manages to include some steakhouse fare that’s replicable (pomegranate-sake cocktails, tuna sashimi burgers) and, thanks to the photographs, enticing.

The Berghoff Cafe Cookbook
by Carlyn Berghoff with Nancy Ross Ryan (Andrews McMeel, $24.99)
Serious cooks won’t find use for most of these recipes— most of the stuff in here (nachos, sandwiches, deviled eggs) hardly require detailed instruction. But Berghoff fans will be satisfied by the anecdotes—and maybe the recipe for spaetzle.

The Seasons on Henry’s Farm
by Terra Brockman (Surrey Books, $25)
Groupies of farmers’ markets will easily be drawn in by Brockman’s lyrical week-by-week account of life on her brother’s farm in central Illinois. The accompanying smattering of simple recipes is simply a bonus.

by John Coletta with Nancy Ross Ryan (Robert Rose, $24.95)
Only Cooking Light could create a book cover as generic as this, but ignore that: Inside, this book by Quartino’s chef is packed with enough knowledgeable, tip-heavy pasta recipes to keep an Italian grandmother busy for years.
