Has brunch finally gotten so big that weekend mornings can’t contain it? That’s the sense we’re getting from Jared Van Camp at Old Town Social . Evoking memories of his dad’s weekend morning routine, he’s put cornmeal-bacon waffles topped with housemade knackwurst sausage and maple syrup on his dinner menu. And he’s not the only one reaching to breakfast: Thomas Elliot Bowman is putting a Middle Eastern spin on chicken and waffles at Otom, plating chicken thighs on a falafel waffle garnished with baba ghanoush, tabouli and tahini. And at Eve, chef Troy Graves is topping a tasso-ham waffle with buttermilk-fried oysters and a pickled okra rémoulade. Says Graves: “I never have [breakfast food] in the morning.” Now nobody else has to, either.
