Description
The Palmer House Hilton's $150 million makeover included the addition of this restaurant, a contemporary dining room entrusted to chef Phillip Foss. This fall, Foss works with a wide array of hearty, autumnal meats, such as prosciutto-wrapped boar tenderloin and a tartlet of lamb sweetbreads. He also goes crazy with foie gras, pairing it with figs in one dish, apples in another and quail in a third.
