A vegan baker is like a cyclist without legs: Uncommon but not unheard of, and—if Sweet Cakes is any indication—sometimes just as successful. Emily Smith, chief baker and co-owner (with her dad) of this East Village destination, presides over the ovens here, and despite not eating cream or eggs or milk chocolate, she still manages to put out perfectly solid red-velvet cupcakes topped with an indulgent buttercream frosting; saucer-sized chocolate-chip cookies with plenty of deep brown-sugar notes; and hearty corn muffins hiding a whole hardboiled egg inside, the perfect handheld breakfast—that is, if you eat that sort of thing.
