The long waits for food at Uptown's newest Ethiopian spot can be frustrating, especially when you see how good the dishes around you look. But keep your cool: Once you get your hands on the flaky, lentil-filled sambusas, the kik alitcha (mild yellow split peas transformed into a silky ginger-and-garlic–riddled puree) and the cool kitfo (Ethiopian steak tartare), you'll understand why everybody in the restaurant seems so unfazed.
