Description
The buzz on chef Homaro Cantu has been reaching fever pitch lately: He's working with the government to "end world hunger" with edible paper, cooking with military-issued lasers and going up against Iron Chef Morimoto in a soon-to-be-aired battle. But what's going on in the mad scientist's restaurant? More of the same, and always something new. Extending his new green color scheme ("It's futuristic and energetic," he says) to the dining room, stark-white has morphed into mossy-green, with warmer results. On the plate, it's anybody's guess what the night's tasting menu holds, but current trickery includes a play on Vietnamese egg-drop soup in which frozen egg- and microgreen-pellets are dropped tableside into steaming soup, and triple-seared beef is paired with "caramelaserized wine." Yes, a laser is involved in a wine pairing.
